Coincidences often play an important role in life. Likewise the idea with our Gold-Apricot Pearls. We sampled during a trip overseas the exotic fruit "Finger Limes" which consits of loose fuit flesh pearls. Immediatly it was clear to us that there has to be a way to recreate this phenomenon in a natural process with our world-class Bailoni Wachauer Gold-Apricot Liqueur.
What are Gold-Apricot Pearls?
In a natural procedure our Wachauer Gold-Apricot Liqueur is transformed into little pearls. The speciality is that the inside of the pearl remain liquid. This is achieved through algae extract, which makes the outside membran flexible but also crisp. The pearls are free from any source of animal produce! Our Gold-Apricot Pearls have 17% ABV.

Stir Mascarpone with lemon juice until creamy. Add the other ingredients and let it chill in the fridge. Serve the Apricot Mascarpone Cream in little waffle cups and garnish with Gold-Apricot Pearls.
